We recently had new neighbors move in, and of course, I’m back on the chocolate chip cookie train! This time, I decided to try Martha Stewart’s Cakey Chocolate Chip Cookies recipe from her Cookies cookbook.
I’m definitely not a crunchy cookie person – give me a chewy or cakey cookie any day – so these were absolutely perfect in my book, and the new neighbors loved them too!
My only complaint is that they start tasting a little like a Chips Ahoy after a few days. If that’s your cookie jam, age these for a few days! 😂
- 2 1/4 cups all purpose flour
- 1/2 tsp baking soda
- 14 Tbsp 1 3/4 sticks unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar packed
- 1 tsp kosher salt
- 1 Tbsp vanilla extract
- 2 eggs large
- 2 cups semisweet chocolate chips
Preheat oven to 350. Whisk together flour and soda. Put butter and sugars in the bowl of an electric mixer and beat on medium until pale and fluffy. Add salt, vanilla, and eggs and mix until just combined. Add flour mixture and mix until just combined. Stir in chocolate chips with a wooden spoon.
Using a 1 Tbsp cookie scoop, drop dough onto baking sheets lined with parchment or a silpat. Bake until centers are set and edges are golden, 10-12 minutes.
