When a coworker requested fruit pizza for her birthday, it hit me that I had never made one! Sally’s Baking Addiction, to the rescue!

This fruit pizza is basically everything wonderful, rolled into one – fresh fruit, a soft sugar cookie, and delicious cream cheese frosting. You can’t go wrong!

Fruit Pizza
Ingredients
Cookie Crust
  • 1/2 cup salted butter
  • 3/4 cup granulated sugar
  • 1 egg large
  • 2 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cornstarch
Frosting
  • 8 ounces cream cheese
  • 1/4 cup salted butter
  • 2 cups powdered sugar
  • 2 tbsp half n half
  • 1 tsp vanilla extract
Toppings
  • assorted fruit
Instructions
Cookie Crust
  1. In a large bowl or stand mixer, cream together butter and sugar. Add egg and vanilla and mix until combined. In a medium bowl, whisk flour, salt, baking powder, baking soda, and cornstarch. Gradually add dry ingredients to wet. Once well combined, cover dough and refrigerate at least 30 minutes.

    Spread chilled dough on a well greased or lined 12-inch pizza pan. Bake until edges are lightly browned, 18-20 minutes.

Frosting
  1. In a medium bowl or stand mixer, beat cream cheese and butter together until smooth. Add remaining ingredents except fruit, and beat for about 3 minutes. Spread thickly over the cooled cookie crust. Decorate with fruit as desired.
