I hope all of my American readers had a fabulous Thanksgiving – I know I sure did! Most of the time we need to juggle holidays between my side of the family and my husband’s side, but this year we were fortunate enough to celebrate twice, once on Thursday with my family, and once on Saturday with his. On Friday inbetween Thanksgivings, we had our own little celebration and decorated for Christmas.

I have come to realize that people who really enjoy decorating for Christmas tend to be split between two camps – those who want to get everything up as early as possible in order to enjoy it for as long as possible, and the purists who prefer to celebrate one holiday at a time. I definitely fall into the latter group, and refuse to do anything Christmas related until Thanksgiving is behind us!

Some years we’ll invite friends over for a tree trimming party, but this time around it was just me, my husband, and Mayhem. I figured we should have some treats, but not wanting to go overboard for just the two of us,  I put out some cheese and crackers, made a nice wassail, and threw together some simple drop sugar cookies – no rolling, cookie cutters, frosting, or sprinkles, just something sweet to munch on between hanging ornaments!

Drop Sugar Cookies

Ingredients

  • 1/2 cups butter
  • 1/2 cups organic shortening (look for Spectrum brand)
  • 1 cup granulated sugar
  • 2 tablespoons milk of your choice
  • 1 egg (large)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 1/2 cups ultragrain flour
  • 3/4 teaspoons salt
  • 1/2 teaspoons baking soda

Directions

Cream butter, shortening and sugar until fluffy, then mix in the milk, egg, and extracts. Sift remaining dry ingredients into the mixture and stir together until smooth. Drop onto a lined or greased cookie sheet using a cookie scoop, then flatten slightly with a juice glass or fork. Bake at 350 for 10-12 minutes or until slightly golden.
