We’re going through a reorg at work, and my fellow managers decided to hold department open houses to introduce our teams to one another. …. but what would a gathering be without treats?! Unfortunately, I didn’t think ahead, and failed to pick up supplies while grocery shopping over the weekend. So, refusing to go to the store after a long day, I was left trying to figure out what I could possibly bake with 1 cup of flour and 2 eggs, and a quick Google led me to this recipe. The original name was Oatmeal Brownie Bars, but they’re essentially a fudge crumble.
Anyway, I didn’t have high hopes, but these were a total hit! Hope you enjoy as much as my team did.

- 1 1/4 cups all-purpose flour
- 1 cup uncooked quick-cooking oats
- 1 cup firmly packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup cold Land O Lakes® Butter cut into chunks
- 1/3 cup Salted Butter
- 3 ounces semisweet chocolate chips
- 1 1/4 cups granulated sugar
- 2 eggs large
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
-
Heat oven to 350°F. Grease 13x9-inch baking pan.
-
In a large mixing bow, combine all oatmeal layer ingredients except the butter. Cut in 2/3 cup butter with pastry blender or fork until sandy. Reserve 1 1/4 cups crumb mixture for topping. Press remaining crumbs into prepared pan and bake 10 minutes.
-
Combine 1/3 cup butter and chocolate in bowl. Microwave until chocolate is melted. Allow to cool slightly.
-
In a the bowl of a mixer, combine granulated sugar, eggs, water and vanilla and beat at medium speed until well mixed. Add melted chocolate mixture; continue beating until well mixed. Add 1 cup flour and baking powder; beat at low speed until well mixed.
-
Carefully spread brownie layer evenly over warm pre-baked crust; top with reserved crumb mixture.
-
Bake 18-22 minutes or until edges are set. (Do not overbake.) Cool completely before cutting into bars.
