I can say without hesitation that my favorite food is broccoli – I’ll sit down with a bowl of raw or steamed broccoli for any meal of the week. While I understand that this veggie love certainly isn’t common, I do think that in roasted form, broccoli has the potential to be universally loved. Picky kids included.

The Perfect Roasted Broccoli

I eat it broccoli incorporated into side dish at least once a week, but some nights, this roasted broccoli will be my entire dinner. It’s that good, and more importantly for a weeknight, it’s that simple.

I’ve served this at dinner parties and over the holidays, and people are continually surprised by not only how delicious this turns out, but also how quickly it comes together. Heck, in most circles, it’s tied with Roasted Brussels Sprouts for my signature dish! Plus, it’s seriously impossible to screw these up, you can literally burn them and they’ll still be super delicious!

Perfect Roasted Broccoli

Ingredients

  • 1 head broccoli (about 2 cups)
  • 3 tablespoons avocado oil (or grapeseed)
  • kosher salt (or sea salt, to taste)
  • pepper (to taste)

Directions

Preheat oven to 450.

Cut broccoli into medium sized florets, rinse well, then dry in a salad spinner.

Place in a bowl or gallon plastic bag, pour oil over the broccoli, and sprinkle with salt and pepper. Toss vigorously until the broccoli is evenly coated.

Spread broccoli onto a jelly roll pan. Bake, stirring occasionally, for 20-30 minutes or until tender and slightly charred around the edges.

  1. I love broccoli too! It is one of my favorite foods, people have this astonished look when they see me munching it at parties. Someone even asked me why am I eating it, when there are other foods there lol.
    I oven roast broccoli too, I love it that way. I don’t add pepper though and usually have a bunch of other veggies with it. I’ve roasted the frozen variety, never the raw one, but either way I am sure it is delish!

  2. I had misplaced my normal roasted broccoli recipe so ran across yours to check the temp & times. Great recipe! Trying adding a little cumin and some lemon juice/zest to it too. I’m generally not a fan of cooked veggies and prefer them raw but this way is so tasty!

  3. The frozen broccoli doesn’t turn out as crispy, so I like the fresh broccoli roasted better. Me and my mom love this stuff and do it all the time! We often combine carrots, potatoes, onions, and other various veggies for a delicious roasted combo. You can add more spices too, like garlic powder!
