Basic Buttercream Icing (recipe here, or icing of your choice)
1 bag egg candies (about 40 candies, Cadbury Mini Eggs or M&Ms work well)
1 tablespoon cocoa powder
1 1/2 tablespoons vanilla extract
Directions
Tint icing in desired pastel color. To frost as pictured, using an offset spatula, pile cupcakes high with frosting, then flatten top and smooth sides.
Arrange 3 egg candies in the center of the icing.
Whisk together vanilla and cocoa powder. Lightly dip a stiff paintbrush into the vanilla-cocoa mixture, then using your thumb or index finger, flick the brush to spatter the cupcakes. Allow to dry before transporting.
