Quick Pumpkin Muffins in a Pinch (Vegan)

Ingredients

Cake

  • 1 15.25 oz boxed cake mix funfetti, white, yellow, or spice work best
  • 1 15 oz can pumpkin
  • 1 Tbsp pumpkin pie spice
  • 1 Tbsp ground cinnamon

Streusel

  • 1/4 cup vegan butter
  • 1/4 cup all purpose flour
  • 1/2 cup brown sugar

Instructions

Cake

  1. Combine all ingredients and mix well. Using an ice cream scoop, divide into a lined cupcake tin.

Streusel

  1. Combine all ingredients and mix until sandy. Sprinkle evenly on batter.
  2. Bake at 350 for 20-25 minutes or until set.
  3. Yields 12 cupcakes.
