Simple Pink (White) Cake

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup shortening I used Spectrum brand
  • 2 cups granulated sugar
  • 3 cups cake flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 2/3 cup water
  • 1 teaspoons vanilla extract
  • 1 tablespoon almond extract
  • 6 egg whites

Instructions

  1. Beat butter and shortening on medium speed until creamy; gradually add sugar and beat well.
  2. Combine flour, baking powder, and salt, and add to butter mixture alternately with milk and water. Beat on low until blended after each addition. Add extracts and mix gently.
  3. In a separate bowl, beat egg whites until stiff peaks form; fold into the batter, about 1/3 of the mix at a time.
  4. Bake in greased and floured 9" rounds or a lined cupcake tin for 16-20 minutes at 350.
